It's not just because she's just about the most friendly and outgoing chef you'll ever meet. It's not even because her delicious dishes are sourced completely locally from within a half-hour radius. The fact of the matter is that Duskie Estes'co-chef and -owner with husband, John Stewart, at both Santa Rosa's Zazu Restaurant and Farm and Healdsburg's Bovolo, and your pick for best chef in Sonoma County'makes our mouths water with culinary creations that leave most diners awestruck.

Much of that's due, of course, to Zazu's onsite farm, with veggies and greens, and the couple's flock of chickens, which supply the eggs to make handmade pasta every morning, and their home-cured salumi. All of Zazu's meat comes from local sources such as Bodega's family-owned Gleason Ranch, and the menu changes daily depending on what's fresh. But it's what Estes does with the ingredients that matters most. It's the reason why she was featured on the Food Network in 2007 and why Emeril Lagasse calls her a friend.
