Chef Spotlight

Dominique Faury

By Stett Holbrook

ALTHOUGH it's an unassuming neighborhood cafe, Twist Cafe and Bistro packs some culinary firepower. Co-owner Dominique Faury cooked for years in top U.S. and European restaurants, including Le Bristol, Taillevent and Apicius, Parisian restaurants that earned two and three Michelin stars. Before opening Twist, Dominique's partner, Eileen Faury, was executive chef at the Westin Hotel in Palo Alto.

Faury is skilled at both white-tablecloth fare—as evidenced by the casual sophistication of Twist Bistro (245 E. Campbell Ave., Campbell; 408.370.2467)—and the crowd-pleasing sandwiches, soups and hearty entrees at Twist Cafe (247 E. Campbell Ave., Campbell; 408.374.8982). For Silicon Valley Restaurant Week, Faury is preparing entree choices that include hanger steak and french fries; steamed wild Alaskan halibut; and portobello Napoleon, layers of mushroom ratatouille and couscous with a basil-tomato emulsion.

Chef Spotlight is a regular feature leading up to Silicon Valley Restaurant Week, Oct. 14–21. Each week, I will profile a chef involved in SVRW. For more information about the event, please go to www.siliconvalleyrestaurantweek.com.
