Spinach Alternatives

THE recent E. coli contamination has cleared most grocery stores of fresh spinach, but here five alternatives for leafy greens.

Beet Greens Buy beets with their leafy greens attached and you've got two dishes for the price of one. Steam the beets and sauté the greens.

Bok Choy Thick leaves make this a great stir-fry vegetable.

Chard Red, yellow or white, chard is vitamin-packed.

Collard Greens Steamed and doused with a little white wine vinegar, collard greens are the unofficial vegetable of the Deep South.

Dandelion Greens No, you can't eat the dandelions growing in your front lawn. They're a different variety.
