Make It Yourself
You can buy a masala mix at your local health or international foods store or play with the spices below, and others, to your tastes. Chai connoisseurs recommend brewing spices for as long as possible before adding tea. The following recipe is adapted from Making Your Own Gourmet Tea Drinks by Mathew Tekuslky.
2 cups water
Combine the water, tea, cardamom, cinnamon stick, 1 teaspoon of the honey and peppercorns in a saucepan and simmer over low heat for five minutes. Add the milk and the rest of the honey. Add the ginger one to two minutes after that, or when the mixture is back to a simmer. Wait 15 to 30 seconds and then strain the tea into two cups.

A quick and spicy masala chai recipe
2 teaspoons loose, black tea
2 cardamom pods
1 cinnamon stick
2 whole cloves
2 teaspoons honey
2 black peppercorns
1/2 cup milk
1 tablespoon peeled and sliced fresh ginger
